Healthy Banana and Berry Pancakes

Healthy Banana & Berry Pancakes


These are a really quick for a light meal or a more substantial snack.

Recipe makes 2 pancakes or 6 mini pancakes.



1 medium ripe banana

2 medium eggs

2 drops vanilla extract

2  heaped dessert sp porridge oats

¼ tspn cinnamon

1 tspn chia seeds (binding effect)



  1. Place all of the ingredients in the blender and blend until well combined – ensure there are no lumps of banana remaining, but be careful not to leave it too long as you could begin to “scramble” the eggs.
  2. Heat a good non-stick frying pan with ½ tspn of rapeseed oil/ spray oil on a medium heat.
  3. Pour pancake mixture into the pan (makes 2 pancakes), cook for 2-3 mins per side. Recommend making 6 mini pancakes as the smaller size are easier to flip over.
  4. Spread 1 tbspn greek yogurt and 1tbspn berries or passionfruit onto the large pancake, roll up and serve.
