Gluten Free & IBS Friendly Luscious Lemon Cake

A lovely light sponge with a lively lemon kick!
Nice treat for Coeliacs or those following the Low FODMAP diet for IBS and other digestive problems.  Super easy to make and won’t let you down…

Ingredients

110g / 4 oz soft margarine
175g / 6oz caster sugar
175g / 6oz self raising gluten free flour
5 tbspn milk / lactose free milk
2 large / 3 small eggs
Rind of a lemon
Syrup Icing:
2 tbspn icing sugar
3 tbspn lemon juice

Baking Instructions:

Preheat oven to 180C/350F/Gas Mark 4.
Grease an 8 inch round tin and line with greaseproof paper.
Cream the sugar and margarine together.
Add the eggs, lemon rind, flour and milk. Mix well together.
Pour into the tin and bake in oven for 40 to 50 minutes.
Mix the icing sugar and lemon juice together.
Leave the cake to cool slightly for aprox 10 mins the pour the lemon syrup slowly over the top of the cake and let it soak in.

Remove cake from the tin when completely cold.

Notes:

Serves 8.

300 calories per slice.
For those following the Low FODMAP diet, you can use normal milk as the amounts of lactose are not over the threshold for causing digestive symptoms.
If you are not following a special diet, you could use normal flour and use one less tablespoon of milk for the same result.I havent tried making cup cakes using this recipe, but I see no reason why it wouldnt work out….
